Suggest a better descriptionPreheat the oven to 350 degrees.
Cook the macaroni according to the package instructions, until not quite soft. Drain and set aside.
In the same pot, heat the evaporated milk, then add the cheeses, starting with the velveta, then the others a little at a time, waiting until each addition is thoroughly melted and smooth.
Add the herbs, salt, and pepper and mix. Taste, and adjust salt and pepper if needed.
Return the macaroni to the pot with the cheese sauce and mix thoroughly.
Pour the Mac & cheese into a buttered 9x13 baking dish, and top with the extra cheeses.
Bake for 30 minutes until the top is toasted, and everything is bubbly.
