1. Preheat the oven to 180°. Slice the baguette and lay on a baking tray. Drizzle with a little olive oil. Cook in the oven for around 5 minutes until slightly golden but not over cooked.
2. In a bowl, toss the tomatoes with the garlic and a drizzle of the olive oil; season with salt and pepper. Transfer the tomatoes to one side of a parchment-lined baking tray and lay the pancetta slices out on the other side(if cooking for vegetarians use a different baking tray). Bake for 15-20 minutes, until the pancetta is crisp. Transfer the pancetta to paper towels to drain, then crumble. If there is too much liquid coming out of the tomatoes, place the pancetta on a different tray and allow to crisp up.
3. Roast the tomatoes for about 10 more minutes if needed, until bursting and lightly caramelized. Transfer the tomatoes to a bowl.
4. Remove the ricotta from their packs and give it a good mix. Season with a shake of garlic powder or fresh garlic diced, salt and pepper.
5. Spread the ricotta on the toasts and top with some tomatoes and crumbled pancetta. Drizzle with olive oil, sprinkle with sea salt and pepper. Serve immediately on a bed of rocket and chopped up basil then drizzled with balsamic glaze.
