Creamy cheese pasta
In a large bowl, whisk together Ricotta cheese, salt, and pepper until well blended. Set aside.
Cook pasta of choice in 4 quarts boiling water. Drain. Reserve 1/3 cup of water.
Return pasta to pot. Add Ricotta cheese mixture, reserved water, lemon zest, and Parmesan cheese. Mix over low heat.
