Sift flour, sugar, baking soda and salt into a bowl, add butter and mix until crumbly. Whisk together egg and 2 tablespoons ice water in another bowl, combine mixture adding more water as needed to form dough. Chill dough wrapped in plastic until firm. On a lightly floured surface roll dough into 1/8 inch thick circle. Fit into 9 inch pie pan, crimp edges, prick with fork and chill while making filling.
Filling:
Beat ricotta and sugar until smooth, add eggs 1 at a time. Beat in vanilla and cinnamon. Pour mixture into pie shell.
Bake at 350 degrees for 45 minutes
