Pre-heat oven to 300°.
Cube the chicken breast in bite size pieces. Salt and pepper to taste and add minced garlic and cook over medium heat in Olive Oil until done.
Reduce heat and add soup (can substitue with Cream of Mushroom or Cream of Chicken and Mushroom), chicken broth and sour cream and stir until well blended.
Crush the sleeves of Ritz Crackers by putting the sleeves in a large gallon size zip lock bag and crush with rolling pin.
Add one sleeve of crushed Ritz Crackers to the bottom of a 2.5 quart casserole dish and drizzle half the butter over the crackers.
Pour the chicken mixture over the Ritz Crackers.
Add the second sleeve of Ritz Crackers to the top to the chicken mixture and drizzle with the remaining butter.
Bake for 40 minutes until hot and bubbly.
