This must be thoroughly cooled once roasted and taken to butcher to slice thin(shaved).
Trim meat, place seasoned roast on roasting rack in open roasting pan. Insert meat thermometer and roast in 300 degree oven or on low (indirect) on Weber gas grill until internal temperature reaches 140 degrees. When slightly cool place in covered glass dish and refrigerate for 24 hours. Take to butcher to be sliced (shaved) and package in 1/2# packages for future use.
Beef can be used with pasta sauce, Bar-B-Q sauce, au jus for hot beef and makes great cold beef sandwiches.
