Suggest a better descriptionPreheat the oven to 375 degrees F. In a large bowl, combine the mashed potatoes and vegetables. Place 1/3 cup of the potato mixture at the narrow end of each slice of roast beef and roll up. Place the beef rolls seam side down in a large shallow roasting pan, making two rows of six. Pour the gravy over the beef rolls, cover tightly with aluminum foil, and bake for 45 to 50 minutes, or until the rolls are heated through and the gravy is bubbly. NOTE: This is a great way to use leftover mashed potatoes (just warm them in the microwave first), but you can also use instant potatoes prepared according to the package directions. NOTES : 4 to 6 servings
