1. Mix all ingredients in a small bowl. May be made a week ahead of time, store airtight at room temperature.
Prepare the pork & fruit:
1. Preheat oven to 425 F.
2. Melt butter in a heavy pot over medium-high heat.
3. Add 2 teaspoons of the RAS EL HANOUT and stir 1 minute.
4. Add pears and saute until tender, stirring occasionally, about 4-5 minutes.
5. Transfer pears to a plate.
6. Add 1 tablespoon olive oil to the same pot over medium heat.
7. Add onions and apricots, saute until onions begin to soften.
8. Add broth and honey, simmer until sauce thickens slightly, about 8 minutes.
9. Return pears to the pot, remove from heat and let stand until cooled to room temperature.
10. Mix 2 tablespoons olive oil and 2 teaspoons RAS EL HANOUT in a small bowl to blend.
11. Rub mixture all over the pork tenderloins.
12. Transfer pork to a roasting pan, roast at 425 F until center of pork is 155 F - about 30 minutes.
13. Transfer pork to a cutting board, let rest for about 10 minutes.
14. Reheat the sauce, cut the pork cross-wise into 1/2 inch thick slices.
15. Serve with the sauce and fruit over the top, sprinkle with the toasted almond slivers
Pork tenderloins can also be grilled on a gas or charcoal grill, same internal temperature is desired.
