Preheat oven to 180?.
Wipe turkey with paper towel.
Stuff chest cavity with lemon and sage stuffing and neck with prune and pine nut stuffing.
Tie legs with kitchen string.
Place some butter under skin. Rub surface of turkey with butter.
Place in roasting dish and cover with greased foil.
Bake for 30 minutes per 500g (3 hours for a 5kg turkey), removing foil for the last 30 minutes to allow the top to brown.
Remove from oven and rest for at least 30 minutes before carving.
