Moist delicious roast turkey
Prepare the brine mixture per the package instructions but substitute apple cider for the ice water before sealing the brining bag. Prior to placing turkey in brine, cut oranges in quarters and insert orange quarters inside of cleaned turkey. Brine in refrigerator or ice filled cooler for 12 -24 hours.
Preheat oven to 500 degrees.
Remove turkey from bag, and discard brine, oranges quarters and the brining bag. Rinse turkey with cold water, pat dry. Lift wing tips up and over back; tuck under turkey. Tie legs together with kitchen string. Place garlic, sage, thyme, parsley, onion, and chicken broth in the bottom of a roasting pan. Place roasting rack in pan. Arrange turkey, breast side down, on roasting rack. Brush turkey back with one tablespoon with vegetable oil, sprinkle with pepper and salt. Bake at 500 degrees for 30 minutes.
Reduce oven temperature to 350 degrees.
Remove turkey from oven. Carefully turn turkey over (breast side up) using tongs. Brush turkey breast with remaining vegetable oil, sprinkle with pepper and salt. Bake at 350 degrees for 1 hour and 15 minutes or until a thermometer inserted into meaty part of thigh registers 170 degrees (make sure not to touch bone). (Shield the turkey with foil if it browns too quickly). Remove turkey from oven; let stand 20 minutes. Reserve pan drippings for gravy.
