Heat oven to 375 degrees.
Remove leaves and trim off root. Rinse beets thoroughly (there is no need to peel skin off of the beets). Cut beets in half lengthwise and then each half into three or four pieces. Coat with Olive Oil. Place into jelly roll pan and sprinkle with salt and pepper. Bake for 40 minutes, tossing half way through cooking time. Serve immediately.
Also good at room temperature or cold.
