Preheat oven to 350F. Cover baking sheet with aluminum foil. Dash chicken breast with olive oil. season both sides of chicken with salt and pepper to taste. bake uncovered for approximately 30 minutes or until breast thoroughly cooked. remove and slice breasts horizontally approximately 2 inches.
Gravy
In sauce pan place coconut oil at high heat. Stir constantly and mix in chicken broth. when ingredients mixed well reduce to low heat. mix in thyme, rosemary, garlic, salt and pepper. simmer until have desired texture. place roast chicken breast.
