A delicious and juicy roasted chicken you don't have to baste!
Pre-heat oven to 425F
Cut up vegetables and place them in the bottom of the roasting pan
Lightly season veggies with salt and pepper
Pat chicken dry with paper towels (if you don't dry it, it won't brown)
Mix 4-5tbs softened butter with the cilantro, 1/2tbs salt and 1/4tsp pepper
Stuff the 3/4 of the butter mixture under the skin of the chicken breast
Place 4 garlic cloves under the skin of the chicken breast as well
Rub the rest of the butter mixture all over the outside of the chicken
Sprinkle the inside cavity and the outside of the chicken with the remaining salt and pepper(or however much you wish to use, it's your preference)
Cut the half lemon into 4 pieces and put them into the cavity of the chicken with the other 2 cloves of garlic
Sprinkle the bird with any remaining chopped cilantro
Place chicken on top of the vegetables without trussing it, and with the wings folded under the back of the chicken
Place in the oven and leave at 425F for 15 minutes, check that it's browning evenly
Turn the heat down to 350F and leave in the oven for 20min per pound of chicken.
Check done-ness by piercing the thickest part of the thigh (between the leg and breast) and if the juices run clear/yellowish, it's done! If the juices are still rosy, give it 5 min and test again.
Once chicken is done pull it out of the oven and let it rest for about 15 to 20 min before serving
