Roasted Elephant Garlic
Pre-heat oven to 350 degrees F. Peel off as much outer skin from garlic as possible. Make level cut across narrow end of bulb exposing individual cloves. Put garlic exposed side up in ovenproof dish. Drizzle 1 tablespoon olive oil over garlic. Bake for 45 minutes until cloves are soft. The roasted garlic can then be spread on grilled meats, toasted bread with melted Swiss cheese, mixed into mashed potatoes or used as a pizza topping.
