Source: From Best American Recipes 2000. Suzanne Dunaway's recipes from Buona Forchetta Handmade Breads. (See recipe for Tucsan Flat bread with Roasted Grapes) The grapes are wonderful for all seasonings, garnishes, salads.
Preheat the oven to 350°F. Grease a cookie sheet with the oil.
Spread the grapes evenly on the cookie sheet. Roast for 1 hour, turning once or twice with a large spatula. The grapes should collapse and start to turn brown around the edges. Remove them before they are completely dried like raisins.
Suzanne Dunaway suggests serving the grapes with broiled quail, tuck them into panettone or plum pudding, or steep them in cognac and serve them over ice cream. They're also delicious stirred into yogurt for breakfast.
