The vinaigrette can be made up to three days in advance and stored in a covered container in the fridge until required. Put the egg yolks into a bowl with the mustard and cider vinegar and whisk together until evenly combined. Slowly drizzle in the oil, whisking continuously to emulsify the mixture. Add the lemon juice and season with salt pepper.
The red cabbage coleslaw can be made up to a day in advance and stored in a covered container in the fridge until required. Combine the red cabbage, green apple, carrot, and red onion in a large non-reactive mixing bowl, and mix together. Drizzle with the vinaigrette and season with salt and pepper.
Add the hazelnuts, capers and parsley, and mix together. Set aside or cover and chill if not using immediately.
When you are ready to cook, preheat the over 180C fan/200C. Wipe the hake fillets dry and season all over with salt.
Heat a large well-seasoned ovenproof sauté or frying pan over a medium-high heat, then add a splash of oil. When it is hot, add the fillets, skin side down, and fry for 4 minutes. Carefully turn the fillets over and place the pan in the oven or 4 minutes, or until the flesh flakes easily. Remove the pan from the oven, over with kitchen foil and leave the fillets to rest for 2 minutes. Garnish with spring onions and serve with the crunchy coleslaw alongside.
