Suggest a better descriptionIn a pan large enough to hold all the nuts in a single layer, melt the butter over a high heat until it starts to foam. Add the nuts and immediately lower the heat to medium. Shake the pan constantly so that the nuts colour all over. Once they have browned, about 3 minutes, add the cayenne, paprika and rosemary, together with a little salt. Mix well and sprinkle in the brown sugar.
Remove from the heat, check the seasoning and drain through a colander. Allow to cool, then serve in bowls with a little more salt sprinkled on top.
