Soft and crunchy mild way to prepare Brussles. Blanched then roasted and each bite ending in a savory finish.
Preheat oven to 350 degrees. In 5-quart saucepan, bring water to a boil with 3 T of Kosher salt. Gently lower brussles into boiling water for 5 minutes. Remove from water and let sit. In an oven safe sauce pan or a saute pan on low-medium heat combine butter and olive oil until butter is melted. Add Brussles,onions,salt and pepper to pan. Toss on medium heat for approximately 8 minutes stirring often with a wooden spoon to avoid scorching. Put oven safe pan directly in oven or transfer to oven safe pan and bake for 12 minutes covered. Remove from oven and top with shredded cheese. Return to oven uncovered for 3 minutes.
Cleaning the dry ends of the Brussles off with shearing scissors will make them more eye appealing and less tough.
