Try this Roasted Pepper, Avocado and Cheese English Muff recipe, or contribute your own.Suggest a better description
Toast the muffins. Put muffins on baking sheet, and top each with a slice of onion. Peel and pit the avocado an cut into 8 wedges and add 2 slices to each muffin, one slice of jack cheese, and divide the red roasted peppers evenly. Add parmesan to the tops of each and broil about 3 minutes. This is a wonderful combination of flavors, and I also added crisp crumbled bacon the recipe didnt call for. SUPER!
