Dice potato and leek and put on roasting pan.
Top with olive oil salt and pepper
Roast 400 40-45 min
Add arugula and roast for 5 min
Add wine to pan to get bits off
Put veggies in blender with enough stock to blend
Do in shifts
Put in large pot and add crem fresh and salt and pepper to taste
Just before serving add 2 T white wine and p cheese
