Preheat Oven to 425.
Peel and cube potatoes. Place potatoes in large saucepan. Add enough salted water to cover and bring to a boil. Cook 3 minutes. Drain.
Spread potatoes on baking sheet. Drizzel with olive oil and sprinkle with tarrgaon, salt, and pepper. Roast until brown and crisp, about 25 minutes.
