Roasted Yukon potatoes
Cut potatoes into chunks
Place tin foil baking dish
Add water to bottom
Cover and cook in microwave for 20 minutes
Add olive oil, salt, pepper, oregano, garlic cloves & lemon
Bake open in oven at 375 for 45-60 minutes
2nd potato recipe:
No microwave
Cover with parchment paper and tin foil
Bake at 350 for 3 hours or until tender
Take out and mix a few times to re-cover potatoes with the olive oil
