1. Preheat oven to 400 degrees
2. Place the halved potatoes in a bowl, and toss them with the oil until evenly coated. Then toss them with the dried herbs, salt and pepper.
3. Place on parchment lined baking sheet and bake in the oven for 30 minutes or until fork tender
4. For crispier, more golden brown potatoes, place them cut side down.
