A healthy way to roast a whole chicken yet it still has that soul, comfort food thing going on.
1. Place the rack in the middle position. Pre heat oven to 400(F). Wash the chicken inside and out with cold water, then drain the chicken cavity-down. (Remove giblets, if any)
2. Place the chicken in a Medium sized roasting pan, breast side up. Brush the Extra virgin olive oil all over the chicken.
Season with salt & pepper, garlic power, oregano and paprika inside and out and under the skin. Finish with another thin coat of the olive oil.
3. Break the garlic or chicken bouillon with your fingers and soak it with some water, just enough to make a little paste. Spread inside the cavity. Take the second cube and repeat the process only this time spread it on the outside of the chicken.
4. Mince the garlic cloves and spread the under the skin of the chicken.
5. Wash the lemon thoroughly, make 6 slices in the lemon in a shape of a Christmas tree. Make sure to keep the lemon whole. Then stuff the lemon in the cavity.
6. Pour 1 can of the cream styled sweet corn all around the chicken. Insert a meat thermometer in the thigh.
7. Place chicken in the oven and lower to 350(F). Roast for a total of 1 1/2 hours or until the thigh reaches 180(F) degrees on the meat thermometer and the juices run clean (no blood dripping from the bottom)
8. Roast for about a half hour and then pour the chicken broth over the chicken, continue roasting until done. Make sure to check on your chicken often and pour more chicken broth if the chicken looks dry. (tip: you can use the left over broth that's
already roasting in the pan.)
9. Remove chicken and let it stand for about 5 minutes before carving.
10. Place the chicken in the serving dish and take all the juices and the corn from the pan and pour all over the roast.
