Roasted Sweet Potato Rounds with Fried Sage
Cut sweet potatoes into 1/2" rounds, puree roasted garlic, olive oil. Toss rounds with garlic oil and salt and pepper. Roast at 450 for ~20 minutes. Garnish with fried sage leaves.
