Suggest a better descriptionPreheat oven to 350 degrees F. Line a rimmed baking sheet with foil.
Wash and dry the sweet potato. Slice it crosswise into 1/3" thick slices.
Place the olive oil in a small dish, and use a silicone brush to coat both sides of each sweet potato slice. Place the sweet potato slices on the baking sheet.
Bake for 20 minutes, then remove from oven and turn over. Bake for 15-20 more minutes, or until browned to liking.
