Suggest a better descriptionPreheat the over to 400 degrees.
Peel and cube the sweet potatoes into 1/2-inch squares and scatter on a sheet pan. Drizzle with the olive oil salt, pepper and garlic. Toss to coat all of the sweet potato.
Place sheet pan in middle rack of oven for 45 minutes. Toss once when a crust has formed on the top so that they can cook on all sides.
Finished product, with Parsley Chicken and broccoli with cheese sauce. they were delicious even though I cooked them a bit too long. the dark parts carmelized instead of burned. tasty!

in process. I used a clay baking pan, which made them brown a bit more than normal I think. also I cut them 3/4" thick.
