1. in medium pot over medium-high heat, saute onions and garlic in olive oil for 1 minute. Add remaining ingredients except for cream. Bring to a boil, reduce heat to low, and simmer for 5 minutes.
2. Remove soup from heat. Working in batches, puree soup in blender (fill blender 1/2 way and use a towel over the lid because it's hot)
3. Adjust seasoning with salt and pepper. Return puree to saucepan and add cream and heat. Garnish with additional basil, if desired.
