Suggest a better descriptionPreheat oven to 325. place the tomatoes, bread and garlic in a tray and roast for 40 minutes or until the bread is crisp and golden.
Remove the garlic and squeeze from skin into a bowl. Add the extra olive oil, vinegar and water and mix to combine. Place the tomatoes and bread mixture in a bowl and toss with the arugula.
Divide between plates, spoon over the roasted garlic dressing and top with prosciutto.
