Suggest a better descriptionPlace tomatoes in a baking dish and drizzle with a little oil. Scatter with thyme and season with black pepper to taste. Toss to combine and bake for 30 minutes or until tomatoes are soft.
Heat 1 tablespoon oil in a frying pan over a medium heat. Add onions and saffron and cook until onions are soft. Reduce heat to low and cook for 10 minutes longer or until onions are golden. Stir in mustard.
Roll out pastry to 1/8th inch thick and cut into 6X10 in rectangle. Using leftover pastry, cut 3/4 inc wide strips and place around the edge of the pastry to form a border.
Place pastry on a baking tray, then top with rocket, onion mixture, tomatoes and basil and bake at 400 degrees for 15 minutes or until pastry is puffed and golden.
