Brine Roasted Turkey
Thaw the Turkey, then remove the neck and giblets from the cavity of the turkey (set it in a pan in the fridge for about a week to thaw). Rinse the turkey inside and out under cold running water.
Mix up your Brine:
Dissovle the salt and sugar in 2 gallons of cold water in a non-reactive container, such as a large insulated cooler, then add the oranges and lemons. Place turkey in brine solution, add more water to cover completely, then remove the turkey and stir your brine. Now replace turkey in brine and keep cool for at least 4 hours, preferably overnight and up to 24 hours.
Preheat your oven to 325 degrees F.
Remove turkey from the brine and rinse well under cold running water. Pat dry with paper towels. Rub butter all over the turkey and sprinkle with salt, then place breast side down in large, heavy roasting pan. Stuff the onion, orange, celery, and carrot in the turkey.
Roast the turkey uncovered, breast side down for 1 hour. Remove from the oven, turn and baste with 1/2 cup stock (chicken broth). Continue roasting with breast side up until an instant read thermometer registers 165 degrees when inserted into the largest section of the thigh, avoiding the bone. Roasting will take approximately 3 hours. Baste the turkey once every hour with 1/2 to 3/4 cups of chicken broth.
