Put Olive Oil in the pan and let it heat a little. When it is warm add shopped onion, garlic and carrots. Add paprika and cook for 5 minutes. Add the remaining vegetables except for Broccoli. Steam for 5 more minutes and pour tomato juice with plum tomatoes. This is the time to add wine.
Cook for 5 more minutes on medium heat, let the wine evaporate. Then cover the vegetables and cook for 10-15 minutes or till they are cooked. Do not forget to add bay leaves for the special aroma of the dish.
Broccoli is very fast to cook compare to the carrots and pepper, so we add them in the last moment together with the spices, soy sauce, salt and pepper.
Cook for additional 3-4 minutes and your dish is ready to serve.
