Toss squash with 2 tablespoons oil, S&P and place on a baking sheet. Roast until well browned 35-45 min (rotating once). Flip and continue roasting until tender and browned, 10-15 min more.
Combine tahini, lemon juice, honey, remaining 1 tablespoon oil, and a pinch of salt together in a bowl. Drizzle squash with tahini dressing and sprinkle with feta, pistachios, and mint.
