A great weeknight side dish for 2 in the summer that doesn't heat up my kitchen. A friend brought me a giant zucchini to into work fresh from her garden. I cut it in half, but you could use 2 smaller large ones, size up your toaster oven pan and roast away.
1. cut the zucchini into wedges, like a pizza
2. put in bowl and put into a bowl and pour 1/2 of the olive oil and salt /pepper on to taste, if it looks dry, add some more olive oil
3. put in toaster oven on 450 degrees for 20 minutes
Courtney, knowing your kitchen, you can use granulated garlic, I'm guessing 1 tsp... but honestly I keep fresh in my spice cabinet in a small bowl and it is so worth the fine chop. Love, Mom
