Rock Candy

Bring 1 cup of water to a boil in a saucepan. Remove from heat. Add 2 cups of sugar and stir continuously until dissolved. Slowly add 2 more cups of sugar, reheating the water if necessary.
When all of the sugar has dissolved, carefully split the liquid, pouring each half into a heat-proof jar or glass. Stir 3 drops of food coloring into one jar and 3 drops of food coloring in the other jar.
Tie a 6-inch piece of string around the middle of a pencil. Lay this atop the mouth of the jar so that the string hangs down into the sugar water. Repeat with the second jar.
Crystals will begin to form in a hour and will continue to solidify for several days. If a layer forms on the surface, periodically break it. When the water has evaporated, the candy is ready to eat.
