Rich chocolate, nuts and marshmallow to spread on thin butter wafers!
Place water in a small saucepan and bring to a boil. Remove from heat and dissolve the unflavored gelatin. Cool.
Chop the mini marshmallows into smaller pieces. quartered works well in this cheeseball.
Beat the cream cheese with a mixer until smooth, add powdered sugar and cocoa. Add vanilla and cooled gelatin. Stir in the marshmallows and 1/2 cup of the chopped walnuts.
Place bowl in refrigerator until just set.
Place a large piece of plastic wrap on the counter. Spread out the remaining 1 cup of chopped walnuts.
Using a spatula, slowly remove the cheese mixture into one ball in the middle of the plastic wrap. Use the wrap to help move and rotate the cheeseball on the nuts covering all surfaces.
Wrap your cheeseball in plastic wrap and chill until ready to serve.
