Classic Shrimp Scampi
Note: 9 servings will feed 9 people generously.
Put a large pot of water on the stove and bring to a boil. When it has come to the boil, add a tablespoon or so of salt and a little olive oil.
In a large pot (or skillet if making smaller servings), melt half of the butter and half of the olive oil over medium-high heat. Saute the shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes. Add shrimp to the pan, season the shrimp with salt and pepper; and cook until they have turned pink and are fully cooked, about 6-8 minutes. Remove the shrimp from the pan; set aside.
Add wine, lemon juice, the other half of the butter and other half of the olive oil to pan and bring to a boil. Add more salt to taste. Add tomatoes and cream and sauté tomatoes for 5 minutes or until soft.
Add the pasta to the water. Stir to make sure the pasta separates; cover. If using fresh angel hair pasta cook for 2-3 minutes, Drain the pasta.
When the pasta is finished, return the shrimp to the pan along with the parsley, basil and cooked pasta. Stir well and season with salt and pepper. Drizzle over a bit more olive oil and serve immediately
