Suggest a better descriptionCook potatoes in boiling unsalted water about 20 minutes or until almost tender. Cool completely. Peel and coarsely shred. In 10-inch skillet cook onion in 1 TBSP of the butter about 10 minutes or till tender but not brown. In large bowl toss together the shredded potatoes, cheese, cooked onion, salt and pepper. Melt rmaining butter in same skillet. Pat potatoes evenly over bottom, leaving a 1/2 inch space around the edge. Cover and cook over medium heat about 6 minutes or til underside is golden brown. Loosen the potatoes with wide spatula; invert onto platter. If desired, slide potatoes back into skillet, browned side up, and brown second side. Trim with additional cheese, if desired.
