1. Cream softened butter and sugar until pale and creamy. Then beat in eggs until well combined.
2. Sift in flour and baking soda. Add vanilla and mix on low until dough forms.
3. half dough. Wrap in siranwrap. Refrigerate for at least 1 hour.
4. Place a ball on floured surface. Sprinkle top with flour. Roll out until 1/4 in thick.
5. Cut into shapes and place on greased baking sheet. Cook 12-15 minutes at 360 degrees or until golden brown.
6. Use a cake knife to lift onto wire rack and cool on cooling rack.
For chocolate cookies: Replace 2 oz of flour with cocoa powder.
