In a bowl whisk to combine flour, baking powder, salt, and cinnamon and put aside for now
In a stand mixer combine butter and sugar whipping with a paddle attachment on medium speed for 4-5 minutes, or until light and fluffy. Add in egg and vanilla taking a moment to combine together.
Add the dry ingredients into the stand mixer and pulse before putting on low speed until just combined together. Scrape down the sides and form a circle on plastic wrap; refrigerate for approx one hour until dough is chilled.
Roll dough out to 1/2 inch thickness and cut out shapes with your desired cutters. Place on a parchment lined pan and cook at 350F for 10-12 minutes making sure to turn at the halfway point.
*For cocoa dough use 2 3/4 flour and 1/2 cup of cocoa.
