Suggest a better descriptionHeat 1 tbsp oil in frying pan. Add onion for 10 mins until golden.
Trim off 100g of pork and whizz in food processor.
Tip into bowl with herbs, breadcrumbs, apricots, onion, 2tbsp oil, seasoning, mix well.
Turn pork belly skin side up. Score 1cm intervals and rub in salt all over.
Turn pork belly and season more. Brush flesh with honey.
Lay stuffing down centre and roll tightly. Tie with string.
Place on a rack in roasting tin and transfer to fridge uncovered up to 24 hours to dry.
Heat fan oven to 180C. Rub pork with remaining oil and more salt. Roast for 30 mins.
Turn oven down to 160C and continue cooking for 2 hours.
Turn oven back up to 200C to crisp up skin for 30 mins.
Remove from oven, cover with foil and rest for 45 mins before carving.
