Season chicken with salt and pepper.
Heat oil and butter in a skillet and brown chicken pieces to a nice golden brown all over, set aside.
Place artichoke hearts and mushrooms in skillet, until mushrooms are brown. Return chicken to skillet and pour in reserved artichoke liquid and wine. Reduce heat to low, and simmer uncovered for 10 to 15 minutes until chicken is fully cooked.
Stir in capers and simmer five extra minutes. Remove from heat and serve with angel hair pasta, rice, or a salad.
If the sauce is to liquid, thicken it with a tablespoon cornstarch dissolved into a bit of water.
