Put all of the ingredients except the potatoes in a medium to large bowl (large enough for all the potatoes to be freely stirred around). Stir until well blended.
Add the potatoes and stir until the potatoes are well coated.
Line a baking sheet with foil. Pour the potatoes on the baking sheet and use a spatula to get the rest of the oil mixture on the top of the potatoes
Roast for 40-60 minutes or until done.
