Shake all the ingredients (except soda water) in a shaker filled with ice.
Strain into highball glass filled with ice and top with soda water.
Garnish with a lemon peel twist and a sprig of rosemary.
To make rosemary honey syrup:
Add two rosemary sprigs to 100ml boiling hot water in a saucepan and let it simmer for 5 mins. Strain the liquid and add 50ml of it to 250ml honey. Stir to combine and store in the fridge.
