1.Preheat the oven to 350 degrees fahrenheit.
2.Heat 1 tablespoon of olive oil in a medium-sized skillet, over medium heat.
3.Add the chopped onion and saute until just starting to brown.
4.Add the minced garlic, finely cut fresh rosemary, salt and pepper to the skillet and continue to cook over medium heat until fragrant, just a couple of minutes.
5.Add the roughly chopped spinach to the onion, garlic, and rosemary mixture and cook until the spinach begins to wilt, this should take another couple of minutes.
6.Remove from heat and set aside.
7.In a large mixing bowl, beat the eggs, milk, and mustard until combined.
8.Add the small tomato pieces and the spinach, onion, garlic, rosemary mixture to the large mixing bowl with the egg mixture. Using a wooden spoon, stir all ingredients together.
9.Using the remaining 1 teaspoon of olive oil, grease a 9" by 9" round pan or whatever baking dish you choose to work with.
10.Pour the contents of the large mixing bowl into the prepared baking dish and cook in the preheated oven until the middle is set and the edges are beginning to brown. Depending on the pan used, this will take about 20- 30 minutes.
