Brown 1 pound of ground beef and drain WELL.
In the meantime, place block of cheese into a double boiler. As it melts, cut down into flat blocks, laying against boiler to melt faster.
Once beef is done and drained, place on top.
Next add tomatoes.
Stir together as cheese melts.
Serve when heated through. Serve with tortillias.
If you prefer, you can just toss all the ingredients into a crock pot and let it simmer until melted down together. Stir occasionally until all cheese is melted. Keep heat on low to keep warm for easy refills!
