One of our favorite summer salads that is wonderful all year round, and "Do Not" throw away leftovers, they are even better the next day!

In a large sauce pan bring salted water to a boil and add the tortellini, cook until they have all floated to the top, strain in a colander.
Toss tortellini with all of the other ingredients and check seasoning, you may not need any salt if the olive brine is salty enough, just season with freshly cracked pepper.
This is such a good salad you will want to make more and more.
