Semi Simple Prime Rib Roast on Rotisserie Grill
---- Make marinade----
Combine Roast, Wine, olive oil, brown sugar, and black pepper and garlic in large bag overnight with prime rib roast to marinade in refrigerator.
--- Cook! ----
Take roast out next day for cooking.
Rub roast with fresh coat of salt and pepper. Place on skewers for rotisserie.
Heat grill to medium high. Use Sear burners until crust has formed on exerior of roast. Then turn off sear burners.
Cook for an additional hour while rotating with lid closed. Monitor every 15 minutes until internal temp is at 115. Then lower heat to medium/low and monitor every 5 minutes until internal temp is 120. Take off the grill, place in pan and let rest for at least 20 minutes.
Carve and enjoy!
