Note 2: Prepare chicken breast for salad by cooking in extra virgin olive oil and season with salt, pepper, oregano and garlic powder on stove top. Butterfly or slice chicken breast in half to cut down on cooking time.
Chop Romaine lettuce to make salad bed
Pare and slice cucumbers (can dice if you prefer them chunkier) and place on top of lettuce
Slice red onion thinly (preferrably paper thin slices) and add to salad
Cut tomatoes in quarters or eights if prefer them thinner and add to salad
After all ingredients are in your salad bowl, toss all salad veggies
Place prepared sliced chicken breast on top of salad ingredients....
Use Caesar Dressing or Vinegarette Dressing
Add a glass of red or white wine and some garlic bread to take it up a notch.
