More than any recipe I know, this one must be prepared with quality ingredients to satisfy your personal taste buds. To me, the brands are important with Hellmans as a substiture if Dukes Mayonnaise is unavailable. Start with the mayo and add the mustard until you like the taste. Then, add the ingredients, one by one, in half measures, to taste. You may find that you like less mustard and more worcestershrire, etc., etc. than the above quantities.
Combine all of the ingredients and whisk until smooth. Refrigerate until about ready to serve and bring to room temperature. It will keep several days in an air tight container. Yield is 1 1/4 cups or enough for 5 pounds of stone crabs, but it is easily doubled or tripled for a feast.
